You're completely right to think that the brain doesn't experience the "pleasures" that the bodies are experiencing. This is how I thought about it when making the animation. Gore isn't for everyone, and I certainly don't blame you for not liking it/understanding it.
For me, I don't imagine myself as one of the character, I enjoy the gore from a witness POV, what turns me on aren't the characters thoughts and experience (even if it adds to it) but the actual reaction from their headless bodies, aka the bloody/gory part.
Sure, they're cumming and there's no head to experience it, but that doesn't mean that the body isn't reacting to the fact that it's ejaculating, just as it's reacting to the fact that it doesn't have a head anymore and is thrashing without thoughts or control.
There are also people who like to imagine themselves as the unfortunate characters, but I'm not one of them so I wouldn't be able to tell you about it. The truth is, gore is very weird and everyone who is turned on by it has a different way of liking it.
Personally, I wouldn't be able to jork it to a steak: because firstly I don't like IRL content, and secondly the only gore I like is feral decapitation.
